1. Prepare the RightRice according to package directions, and set aside. 2. In a large skillet, on med-high heat, add 2 tablespoons of oil, black beans, corn, and tomatoes. Cook for about 3 minutes, and add in the taco seasoning. Stir to combine and cook for an additional 3-5 minutes. Season with salt and pepper to taste and remove from heat. 3. Serve over RightRice. 4.
