Dolores Roach Inspired Beef Empanadas

1. Preheat oven to 375*F.
2. Roll out pie crusts. Using a bowl similar to a small cereal bowl, trace circles onto each pie crust. You should get a total of 12 circles.
3. Line a baking sheet with parchment paper and place the circles onto the sheet and set aside.
4. In a large skillet on medium heat, cook the ground beef, onions and potatoes until beef is cooked through, and the veggies are tender. Drain any excess fat.
5. Add in seasonings and remove from the heat. Add 2 - 3 Tablespoons of filling to one side of each circle. Top with about 1 tablespoon of cheese. Fold pie crust circle in half, keeping the filling inside, and press edges down with a fork.
6. Beat egg in a small bowl and brush on top of each empanada.
7. Bake for 25-30 minutes or until tops are golden. Enjoy!
